Mud Pie

I finally gave into my dessert craving last night at midnight by making the quickest and easiest dessert recipe that I have been making for years (probably since I was 5!). Mud pie. It's a quick brownie recipe that only requires a bowl, spoon, and measuring cups. No need to drag out your kitchen aid mixer! It only takes 3 minutes to make the batter and 25 minutes to bake.



MUD PIE

1 cup sugar
1/2 cup butter, melted
1 t. vanilla
1/4 t. salt
2 eggs
1/3 c. of flour
1/3 c. cocoa
1 c. chopped nuts, optional

1.) Preheat oven to 325 degrees. Grease round pie plate (8 x 1 1/4).

2.) Mix all ingredients (except nuts) in a medium bowl. Stir in nuts (if desired). Pour into pan.

3.) Bake until wooden pick inserted halfway between center and edge comes out clean, around 25 minutes. This will give you a gooey brownie. If you prefer it more cake-like keep the "pie" in the oven until a toothpick comes out clean when inserted into the center (this is what I do).

4.) Cool until bottom is cool to touch. Serve slices with whipped cream or vanilla ice cream.

Mud pie, too?!! Man, you guys eat like kings compared to us - I had an apple for dinner last night. Golly, mud pie sounds good!

Anything that is fast and yummy gets my vote. Glad to know I am not the only one who wakes up in the middle of the night with a craving (not that kind of craving!) and gets cooking.

Hi Kady,
This pie sounds like the combination of my two favorite things: chocolate and easy. It's interesting, mud pie in the South has a totally different connotation--marshmallows, fudge, large quantities of nuts, etc. Like Rocky Road, except in pie form. This one sounds much more civilized and simple.

Rorie, Ironically we couldn't be more poor--I've just gotten incredibly creative with no money and making it work anyway.

jennifer, ooh, i wonder if you could turn mud pie into rocky road? I love rocky road! Seriously, this is the best last minute recipe ever. It's always a hit. And it satisfies every chocolate craving.
